McKellar Ridge Sparkling Pinot Noir with home-made Chutney!

This recipe is really simple, yet so delicious and matched to a free-range Pialligo Estate ham.

Chutney

Jar of Morelo pitted cherries

100gms dried apricots, chopped

4 sprigs fresh thyme

3 allspice berries

1/2c balsamic vinegar

1 Tb black mustard seeds

Black pepper

Smoked salt

Drain the cherries (keep the juice). Add all the ingredients to a small saucepan and simmer until the cherries have cooked down and the apricots are soft. Check the juices for sweetness and add a couple of tablespoons of the jar juice (if you like your chutney sweet). Season well with fresh cracked pepper and add a pinch of smoked salt.

A good chutney is dry but with a little wetness it adds moistness to your ham. A perfect match to the light but deliciously berry McKellar Ridge Sparkling Red Pinot Noir. Enjoy!
