Helm Riesling with Fresh Oysters

Helm Riesling with Fresh Oysters and a spring onion and white pepper vinaigrette

This is outstanding and perfect for Christmas Day.

12 fresh oysters

1/4c apple cider or white vinegar

1/4c water

1/4tsp white pepper

Pinch of sugar

1/2tsp lime zest

4 very thin spring onions or 2 medium sized sliced down the middle, chopped

 Add the vinegar, water, pinch of sugar and the whites of the chopped spring onions to a small pan and bring to a rapid simmer. Boil for about 2 mins, take off the heat and allow to cool completely. Once cooled, add the white pepper, the lime zest and the about a TB of the finely sliced green part of the spring onions. Test for seasoning, it needs to be tart, zesty and a little peppery all at once without being overpowering. Decant to pretty serving bowls and add a scant teaspoon of the vinaigrette to your oysters just before serving.

 Serve with large chilled glassfuls of Helm 2017 Riesling.
